Ingredients
- 1 cup whole milk
- 2/3 cup cane sugar
- 1/2 cup heavy cream
- 2 teaspoons vanilla extract
- 1/4 teaspoon almond extract
Instructions
- Heat the milk and the sugar in a small saucepan over low heat, stirring, just until the sugar has dissolved, about 3 minutes. The milk should be warm, not simmering.
- Take the pan off the heat and let the milk cool for 10 minutes.
- Stir in the cream, the vanilla extract and the almond extract.
- Pour the creamer into a clean bottle or jar, close it and refrigerate. Shake before each use.

With three ingredients on the label and three figures beside them, the amounts can be calculated. One cup of whole milk, half a cup of heavy cream and two thirds of a cup of sugar make about 30 tablespoons. By USDA figures each has 35 calories, about 1.7 grams of fat and a little over 4 grams of added sugar, against 35, 1.5 and 4 on the bottle.

Vanilla and almond for the cake flavour
This version builds the cake flavour from vanilla with a little almond extract, the pair used in the wedding cake creamer on this site, with less almond.
- Almond extract is far stronger than vanilla. The batch takes a quarter teaspoon of it to two teaspoons of vanilla.
- Butter extract or cake batter flavouring can replace the almond extract, in the same amount.
- Clear vanilla keeps the creamer white. Brown vanilla extract tints it ivory.
Sprinkles go on top, not into the bottle
Sprinkles stirred into the bottle dissolve, and their colours run together. For the confetti, froth 3 tablespoons of the creamer with a handheld milk frother, spoon the foam onto the coffee and scatter 1/2 teaspoon of rainbow sprinkles over it just before drinking. The cold foam creamer is made for frothing.
Storing the birthday cake creamer
It keeps as long as the milk and the cream it was made from: go by the earlier of the two dates on the cartons, and no longer than a week. Keep the bottle in the body of the refrigerator, not in the door.
